Made by hand, jar by jar

Fruit, sugar, and peppers that bite back.

Ghost and scorpion peppers cooked down with strawberries, raspberries and blueberries into a jelly you can put on cornbread, cream cheese, pork, or a spoon.

Every jar is made by hand in small batches. Flavor shifts from batch to batch with the fruit and the peppers, and some batches are made only once — when a growing season gives peppers a flavor that can’t be repeated, that batch ends when the jars do.

One-time batches

Peppers change with the season. Some batches carry a flavor that will not come back, and they are marked on the jar and on the product page.

Stock counts on this site are the real number of jars in hand. When a one-time batch sells out, the listing closes.

The heat scale

Every jar carries a number. It describes how the jelly eats on a cracker, not the Scoville rating of the pepper that went in.

The scale starts at three. Nothing has ever been made below it, so a one and a two are not on offer here.

Heat moves a little between batches. Peppers from the same plant are not the same pepper twice, so treat the number as the batch’s intent rather than a guarantee.
